The declared policy of The Society is "to provide, support and encourage all areas of carotenoid science, pure and applied, academic and commercial, research and educational."
More specific objectives identified are:
As a truly international and independent organization, The Society will seek to increase public awareness of the carotenoid field and of exciting new advances, and to provide reasoned, authoritative statements on controversial matters.
The next Conference on Food Pigments will be held in Budapest, 20-24 June, 2010.

The 16th International Symposium on Carotenoids will be held in July 2011 in the World Heritage city of Krakow, Poland. Professor Kazimierz Strzalka at the Department of Biochemistry, Biophysics and Biotechnology, Jagiellonian University will be hosting this Symposium. Professor Strzalka and the local organizing committee will be creating a web site dedicated to the 2011 Symposium in the upcoming months
