Astaxanthin (1), a red-orange carotenoid pigment, is a powerful biological antioxidant that occurs naturally in a wide variety of living organisms. The 16th International Symposium on Carotenoids will be held in July 17-22, 2011 in the World Heritage city of Krakow, Poland. Professor Kazimierz Strzalka at the Department of Biochemistry, Biophysics and Biotechnology, Jagiellonian University will be hosting this Symposium.
