Astaxanthin (1), a red-orange carotenoid pigment, is a powerful biological antioxidant that occurs naturally in a wide variety of living organisms. The 16th International Symposium on Carotenoids will be held in July 2011 in the World Heritage city of Krakow, Poland. Professor Kazimierz Strzalka at the Department of Biochemistry, Biophysics and Biotechnology, Jagiellonian University will be hosting this Symposium. Professor Strzalka and the local organizing committee will be creating a web site dedicated to the 2011 Symposium in the upcoming months
